In a blender, add all of the ingredients and mix for 1 minute
Transfer to a clean bowl, cover and let rest for 1 hour
Heat up a skillet to medium high.
Whisk the batter and pour a ladle full of batter into the pan. Rotate the pan to cover the bottom with a thin layer of batter. If you find it's too thick to cover the bottom quickly, add a tad water to the batter.
Cook for approximately 1 minute or until golden brown. Flip and cook for an additional 30 seconds - 1 minute.
